Gluten … the strange word that pops up more and more. What is gluten? What is it doing? And can I eat insects if I am gluten intolerant? We will try to answer these questions for you in the text below!
Gluten is a mixture of proteins that occurs in certain grains. Wheat, barley and rye are a good example of such grains. All products made from these grains also contain gluten. Other grains can also be ‘contaminated’ with gluten. These are products such as buckwheat and quinoa. Gluten gives elasticity and firmness to the dough and ensures, for example, that your bread has such a nice airy structure!
Anno 2018, a gluten-free diet is becoming increasingly popular. This can have several causes; you are gluten intolerant, you have celiac disease or you do not eat gluten to improve your health. Fortunately, there are many gluten-free products on the market!
Products are called gluten-free if they contain less than 20 ppm (parts per million). Furthermore, the term also exists; with very low gluten content. The maximum gluten content in these products is 100 mg per kilo. These products are both suitable for people who suffer from gluten intolerance or celiac disease but do not have to be completely gluten-free.
What about actually with edible insects? Do insects gluten contain? h2>
Insects are naturally lactose, sugar and gluten-free. When insects are fed with products containing gluten, it may be that the gluten is not yet fully digested, generally gluten
Some insects breeders feed insects with grain products. If there is no guarantee that the product is gluten-free, this must always be mentioned on the label with the allergens. Products that contain insects (eg pastes, bread and chips) usually contain gluten.
